Tapioca, also known as Cassava has been consumed for centuries by many cultures. It’s dense flesh with a sweetish taste when fried can be enjoyed mashed, boiled or grilled. The dark leaves can also be cooked and served as spinach.
Tapioca is not only a nutritious meal but is also easy to grow.
Plant in elevated soil, as you would potato and cover with grass cuttings or mulch. In spring leaves will start to shoot and the growth below the soil will begin. When ready to harvest, make more cuttings to plant the next season.
